Great quality dairy products come from the milk of cows that are respected and treated well…that’s what it is all about.
Our farms are placed on 1700 acres, over 2.5 square miles, of pasture and fields of corn, soy beans, alfalfa, and wheat. The Creamery sits between the two farms owned by brothers James and Robert Baerwolf. From these two farms we produce 100% of the milk used at the Sassy Cow Creamery.
Our love for all dairying led us to a unique situation of having the two distinct herds, traditional and organic. Our traditional herd started in the 1990’s with 50 cows and has grown with our family to the current size of 600 cows at the traditional farm. The traditional cattle live on a new farm site built in 1999 and expanded in 2003. In 2017 a state-of-the-art rotary parlor was built. The cows are housed in a sand bedded freestall barn and during the nice times of the year, cattle can go out on grass pastures to graze, exercise and enjoy the sun.
In 2000, we recognized the growing consumer trend and interest in organic foods so we developed a portion of our herd using organic practices. The organic herd consists of 250 cows that live a half mile north of the Creamery location. A considerable amount of the organic cows’ diet is from grass grown on our organic pastures.
We pride ourselves on the quality of our milk, every month we test the quality of each cows’ milk so we can ensure the safest, highest quality and best tasting products to our customers. Prior to the creation of our creamery, our milk was put on a truck and pooled with milk from other farms and that was the last we ever saw of it. Having extreme pride in our cows and their milk, we decided to bring our great milk directly to you, as a result, Sassy Cow Creamery was built!
Sassy Cow is the result of two farms that are owned and operated by brothers James and Robert Baerwolf and their families. James and Robert are the third generation to farm the land located in Columbia County, WI that their grandfather purchased in 1946. James and Robert’s parents farmed the land their entire lives and now their children take an active role on the farms today.
Both James and Robert graduated from UW-Madison and began dairying right after college. They both also have wives (both named Jenny) and seven children in total. Just like their children today, James and Robert both worked with dairy cattle since the time they were old enough to follow their parents around on the farm. The love for the cows and for the work is a true family tradition that continues to be passed down.
We feel the success of this tradition is directly related to how well the dairy cattle are taken care of, and we place the highest value on the well-being of our animals, and every farm-related decision must be good for the cows. Our families have always farmed with the cows “taking center stage” and all aspects of Sassy Cow Creamery are no different…even our name conveys the attitude that it all starts with superior cows.
Sassy Cow Creamery is a farmstead milk bottling business that opened its doors in 2008 on the Baerwolf family farm located seven miles north of Sun Prairie. The site for the Creamery was chosen between both dairy herds so that all processing could be done in one convenient location. We are located only fifteen minutes north of Madison and just seven miles north of Sun Prairie off of Hwy N.
Our store is open to the public and is located right at the creamery. You can purchase our milk, premium ice cream, dairy products and other local products in the store. You can also see our products being made through the large viewing windows located between the store and processing area.
We believe that one of Wisconsin agriculture’s greatest assets is its diversity. It is our belief that all styles of farms should thrive and do well. It is an extension of this philosophy that brought about Sassy Cow Creamery. There was a great amount of time and effort put into research prior to building the Creamery. At one time, almost every community had a milk bottling or cheese plant located nearby, today most are gone. We believe that the timing is right once again for a local farmstead dairy. It is this core belief that determines how we manage Sassy Cow Creamery. We host many informational and educational events at the creamery to encourage awareness of where dairy products come from.
Today, many people don’t know or recognize the ingredients in the food they purchase and consume. We offer an alternative to that. The creamery does not manufacture anything but instead the cow does all the work naturally. Sassy Cow Creamery just picks up where she left off and brings great tasting dairy products to you, the consumer. Stop by and visit us at the Creamery and see firsthand where Sassy Cow products are made. The creamery store is open 7 days a week. During the week you can view milk bottling and ice cream making through the large viewing windows. We offer our entire product line along with a large variety of other Wisconsin products including cheese, eggs, bakery, chocolates, and more! You can also enjoy a freshly made ice cream cone, dish, sundae, milk shake or malt during your visit. We have a large park shelter and tractor playground where you can enjoy a picnic lunch and dessert!
